INGREDIENTS
1.6 kg chicken, cut into pieces
2 chorizo sausages, halved length ways
90 g large green olives
250 g cherry tomatoes
8 sprigs oregano, halved
1 lemon, cut into wedges
12 garlic cloves, skin on
1 tbsp olive oil
METHOD
1. Preheat oven to 200C/180C fan/gas 6. Line a baking tray
with non-stick baking paper.
2. Add the chicken, chorizo, olives, tomatoes, oregano, lemon, garlic, oil, salt and pepper and toss to combine. Cook for 30–35 minutes or until chicken is cooked through and the chorizo is crisp.
3. Discard the lemon wedges before serving.
